“The other part I love obviously,
is going to see the pigs, because
they are all incredibly fascinating
creatures. Watching the farmers
talk to the pigs as they are
wandering around is quite neat.”
Visiting the farms gives her
the chance to reconnect with
the animals and see their
natural behaviour in a healthy
environment.
“Listening to the sows talk to their
piglets and the grunt she does
when she’s going to flop down and
feed them. It’s a real privilege to
watch.”
CHINESE FIVE
SPICE SAUSAGE
With summer BBQ’s in full
swing, and New Zealanders
hungry for new flavours,
Freedom Farms has launched
a brand-new Chinese five
spice sausage which seeks to
touch all five elements of taste:
sweetness, sourness, saltiness,
bitterness and umami.
This sausage blends star anise,
cinnamon, Sichuan pepper,
cloves and fennel, with a bit of
ginger and free-farmed pork
that tastes the way nature
intended.
The flavour adds a deep
richness and does a great job
of highlighting the sweetness
of the pork. They’re a great
addition to the backyard BBQ
– consider making rice noodle
salads with lots of veggies to
