TALLEY’S GROUP (AUCKLAND) www.foodtechnology.co.nz 79 CABERNET FOODS (WAIRARAPA) Cabernet Foods’ Everton Dry Aged Beef is three years in the making…and it’s clearly a winning formula. Observing, testing, trialling and showcasing to the public takes time and patience, but the company says taking beef cuts with traditional aging methods in mind, applying new technology and hygienic processes to create an eating experience of natural flavours and tenderness is a process almost forgotten these days. The Wairarapa company, which won the NZ Food Awards chilled short shelf life category in 2017, is a versatile meat supplier, with its own livestock buyers, nursery farms, processing plants, refrigerated delivery vehicles and dedicated sales teams. Cabernet Foods delivers the meat of 120,000 sheep, 10,000 cattle, 30,000 pigs and other animals to distributers, meat processers and retailers throughout New Zealand each year. www.cabernet.co.nz SPRING SHEEP MILK CO (TAUPO) MANUKEE (AUCKLAND) York Spencer has always been fascinated by UMF Manuka honey – its place as one of nature’s wonderfoods has seen the drink entrepreneur enjoy it for many years. So when he decided to make healthy ‘better-for-you’ daily wellness drinks, he knew that raw honey goodness would feature prominently. MANUKEE’s honey comes from Ross Apiaries, a family-owned beekeeping operation near Tongariro National Park, and is the first UMF Manuka honey drink in the world. “We aim to embody that pioneering spirit by constantly evolving, innovating and creating wellness products that utilise the amazing benefits of Manuka honey to enrich people’s lives,” Auckland-based Spencer says. The product comes in two flavours – Elderberry & Lemon, and Ginger & Pear – and was a finalist in the NZ Food Awards 2017. www.manukee.co.nz Ask Spring Sheep Milk staff where their sheep are, and they’ll point you in the direction of ‘our girls’ enjoying the fresh green grass, warm sun and clean air on the farm near Lake Taupo. The company understands how integral happy animals are to its success – the Landcorp Farming/SLC Group-owned company has recently clinched the supreme award at the NZ Food Awards for its Vanilla-Flavoured Probiotic Sheep Milk Powder, which also won the export innovation award. “We care for our animals, we employ the best in class farm management practices, and we farm to ensure that our environment is left in excellent condition for our future generations,” chief operating officer Nick Hammond says. “We’re a really small company trying to do really big things.” www.springsheepnz.com NEW ZEALAND TAMARILLO CO-OPERATIVE (NORTHLAND) New Zealand’s tamarillo cooperative TAMCO has just signed a major deal with American distributor Serious Foodie, meaning Tamarillo marinade and vinegar based on New Zealand fruit will be sold in the United States and Canada. Tamarillos are processed into pulp and vinegar concentrate in New Zealand before export, and will be sold online, at US farmers’ markets and within gourmet supermarkets and stores. Director and manager Robin Nitschke says the deal began more than two years ago, after Serious Foodie expressed an interest in expanding its range of high-end specialty products. The co-operative, which was established three years ago, will be supplying vinaigrette and relish to Australia, and negotiations are underway for concentrate to be introduced to European and Asian markets. “Our aim is to have more influence at the beginning of the supply chain by channelling fruit through one merchant and then providing more choices to add value to the fruit at the end of the supply chain,” Nitschke says. www.tamco.co.nz Waffle with bacon and bourbon ripple…blue cheese, pear, walnut and honeycomb…rockmelon and prosciutto – these were just a few of the innovative entries in the 21st Annual New Zealand Ice Cream awards last year. However, when it came to the top of the crop, Talley’s Group took home the supreme award for large manufacturer with its Talley’s Export Green Tea Ice Cream. Judges say the icecream stood out for having a good creamy texture and green tea flavour with no astringency. Talley’s says its Green Tea flavour is made from Japanese Matcha green tea, with a delicate yet complex flavour. www.talleys.co.nz
