COASTAL SPRING LAMB Based in Turakina on the Tunnel Hill farm, Coastal Spring Lamb took out the 2016 Massey University Supreme Award at the New Zealand Food Awards. Owned by Richard and Suze Redmayne, the company uses the first spring lambs from a select group of family farms on the North Island’s west and east coasts to produce Coastal Spring Lamb for the New Zealand and overseas markets. The lamb is described as tender, succulent and full of flavour, with the secret being the spring pastures filled with lush ryegrass mixed with clovers and herbs. The company also won the Export Innovation and Chilled Foods Award categories in 2016. www.coastalspringlamb.co.nz 64 ANNUAL DIRECTORY 2017 MOA Cascara cider is the brainchild of Moa founder Josh Scott and self-proclaimed coffee and tea nerd Nelson-born Claris Jones-White. For those who don’t know, Cascara is the skin that remains after coffee beans are removed from the inside of a coffee cherry, a thin-fleshed fruit which ripens around nine months after the coffee plant flowers. The New Zealand-first brew was created by fashioning a giant tea bag, with each dunk offering a hit of superfood Cascara. The black Doris plum properties and tea-like tannins of the coffee cherry skins work perfectly with the dryness of the traditional apple cider, creating an almost peaty or whisky-like finish, served straight-up chilled, over ice or with a touch of fresh lime in the heat of the summer sun.
