LI DAY (AgResearch) Day is the science impact leader - dairy processing and supply, and specialises in food rheology and structural assembly of dairy proteins and milk-fat globule membrane, amongst other topics. She is the subject co-editor for Elsvier Food Science Module, and overseas PhD supervisor for the Harbin Institute of Technology in China. STEVE ELLWOOD (Otago Polytechnic) Ellwood is a senior lecturer in the Food Design Institute at Otago Polytechnic. His hospitality journey started 30 years ago in hotels, and set a solid foundation for when he became a professional chef. Ellwood has always been interested in technology, and started applying it to the food industry. In 2006, he started a food demo blog to inform his students and, 750,000 hits later, he was sold on using technology to aid the culinary experience. Ellwood went on to design ‘Taste- IT’, a web-based application where students can easily submit, analyse and iterate sensory perception feedback. The programme is gaining momentum, and has been used as a general feedback tool in many contexts - even the Free Ambulance in Wellington trialled it for assessing competency. Ellwood says technology offers easier access for education, but it’s important not to lose the pedagogy behind the learning. www.foodtechnology.co.nz 51 PROFESSOR IAN SHAW (Canterbury University) Shaw is an academic, author and broadcaster with a special interest in the science underpinning food safety. He is Professor of Toxicology, was Pro Vice-Chancellor (Science) and a member of the New Zealand Food Safety Advisory Board. He has written for newspapers, appeared on television and radio, and given two TEDx talks. His second book was turned into a TVNZ television series ‘What’s really in our food?’. WHO’S WHO ANDY ROUTLEY (DB Breweries) Routley is managing director and joined the iconic New Zealand brewery in 2013. He has more than 25 years’ experience in the consumer goods and drinks sector in Europe, Australia and the US. Routley held the role of global brand marketing director for Miller Beer at SAB Miller from 2005-2009, and is passionate about the world of beer and building great brands, relationships and experiences
