BAKERY PROCESSING EQUIPMENT MARKET SOARS 20 JUNE 2016 FT085 BAKING SPECIAL TESTING THE PHYSICAL PROPERTIES OF BAKED PRODUCTS Often the ‘experience’ of eating is just as important as flavour and taste. Firmness, softness, volume and springiness are but some of the physical properties customers look for and associate with a particular product. It’s what sets your goods apart from the rest, and what ensures customers have a repeatable and enjoyable experience. To make sure your baked goods maintain a consistent level of quality batch to batch, it’s important to use a reliable method to track any physical changes of the end product. Stable Micro Systems have a number of innovative ways to let you see in real time the ‘crunch’ of your cracker or the ‘bite’ in your bagel. Tracking how production runs and ingredient changes affect your final product is a breeze, comparing results side-by-side to make sure your product stays consistent both on the shelf and with the end customer. With a Stable Micro Systems Texture Analyser and Volscan, you can ensure your product remains consistent and your consumers enjoy the same eating experience again and again. The world’s bakery processing equipment market is projected to grow at an annual rate of 7.3 per cent from 2016 to 2020 to reach US$13.62 billion by the end of the decade, according to American research company Research and Markets. But there’s a warning with the good news… the popularity of in-store and artisan bakery products negatively affecting the sales of industrial bakery products poses one of the restraints for the bakery processing equipment market, along with the high fixed cost involved in upgrading and maintaining equipment. Research shows that bakery equipment markets are driven by an increased demand for bread, pastries and other baked goods, and the industry is also affected by growing demand for frozen bakery products, advancement in manufacturing processes and technologies, automation and robotics in bakery processing equipment. The Asia-Pacific accounted for the largest market share for bakery processing equipment, followed by Europe and North America. Bakery processing equipment products such as ovens, proofers and mixers are among widely used products in Asia-Pacific; changing bakery products consumption patterns are one of the major factors driving the bakery processing equipment market in this region.  The North American region is projected to be the fastest-growing market with investments from several multinational manufacturers, especially in countries such as the U.S. and Canada, the company says.
