Harm can come from a number of areas, commonly being microbial (bad bacteria), foreign objects, allergens (eight common ones and several other uncommon) and cross contamination. All food processors are HACCP accredited or similar, which stands for Hazard Analysis of Critical Control Points. Control points exist in many areas of a food processing plant and it is critical to know where and what the control points are and put in place the best possible management systems to understand and control them. Common Control Points are cleaning, temperature of cool rooms, and calibration / validation of metal / x-ray detection among many others. GMP & 5S – Assists Food Safety Good Manufacturing Practice (GMP) should be a top priority. If these management policies and systems are in place, then managing food safety becomes much easier and sustainable. ‘5S’ is one such management system that not only aids food safety but can deliver greater efficiencies, less wastage and greater output of quality product, leading to greater returns. Take cleaning for example – a classic Critical Control Point which, if not done correctly, can lead to microbial contamination of food and serious cross contamination.
