CRANBERRY ENERGY BARS www.foodtechnology.co.nz 5 Cranberries – The Perfect Complement Sweet dried cranberries are quite unique, as they add both tartness and sweetness to a dish. Added to baked goods, cranberries offer a tanginess that will cut through the sweet and, for savoury foods, they offer a satisfyingly sweet element. A tasty complement to a variety of food, sweet dried cranberries are perfect in trail mixes, cereals and bars for that chewy texture, in breads and buns for a sweet treat and even as an addition to meat stuffing for that tangy, sweet flavour that goes so well with roasts, adding delicious taste and texture. Consumers are becoming increasingly more aware of the nutritional benefits of the foods they consume. This is good news for cranberries, as they are not only delicious, but packed full of vitamin C, dietary fibre and antioxidants. By adding sweet dried cranberries to their products, New Zealand food manufacturers gain the nutritional benefits as well as great tasting food. With a variety of sizes and moisture levels, sweet dried cranberries are available diced, sliced and whole. Cranberries are an excellent staple ingredient in the kitchen due to their extended shelf life. James Crisp also proudly supplies a full range of dried fruits, nuts, flour and much more. Directions: 1) Line a 9-inch square pan with baking paper. In a large bowl, stir together the rolled oats, peanut butter and agave syrup. Add the cranberries, dark chocolate and chopped almonds. 2) Scoop the mixture into the prepared pan and spread out evenly. Cover with another piece of baking paper and press the mixture down firmly with hands until even and smooth. 3) Place the pan in the fridge for 1-2 hours, until the mixture is firm enough to slice. Take the mixture from the pan, remove the upper piece of baking paper and slice it with a very sharp knife in 24 equal sized bars. Serve at room temperature. Ingredients: • 160 grams rolled oats • 320 grams peanut butter • 100 grams agave nectar • 90 grams dried cranberries • 90 grams dark chocolate • 25 grams chopped almonds FT146
