Allergens are one of the largest causes of global product recalls, with the major risk for food manufacturers being the potential for cross contamination with food allergens during production processes. The aim of any food manufacturer‘s Food Allergen Management Programme is to minimise this risk. An important tool in any allergen management plan is testing for the presence or, better still, absence of allergens. There are now tools available to allow industry to take more control of their allergen management onsite. Food contact surfaces, solid products such as raw materials, in-process material or finished products and liquid samples (such as liquid products or rinse water) can be tested. Everything is supplied with the kit and being stored at room temperature allows immediate usage. Results are read visually, and the limit of detection is 1ppm of milk protein. This was mainly due to processors having to decide whether to look for casein or β - Lactoglobulin as an indicator for allergenic residues. For the detection of bovine milk in foodstuffs, sensitive detection systems are required. Approximately 80 per cent of bovine milk proteins are caseins. β - Lactoglobulin, the major allergen of whey, represents a further 10 per cent of the total protein. With the AgraStrip Total Milk kit, it is now possible to test for both casein and β - Lactoglobulin at the same time.
