Trim management Marel’s Trim Management System is designed to analyse beef and pork trim for fat/lean ratio, and give processors the ability to manage their trim and hit target fat percentage. The main features of this system are: • X-ray technology for accurate, chemical  lean measurements; • Batching into desired chemical lean ratio; • Available as a stand-alone unit or integrated with a Marel StreamLine system; • Superior bone and other contaminant detection. The core of the Marel trim management system is the SensorX, which uses x-ray technology to scan for density variations in the product. These variations enable the SensorX to detect the presence of hazardous contaminants and decide the precise chemical lean (CL) ratio of the meat. Using Marel’s superior grading and batching technology, the system creates different batches of a precise chemical lean ratio, based on the processor’s requirements (for example, 50/50, 75/25 and 80/20).
